Napa Valley Cabernet Sauvignon: Cool vs. Warm Climate
All varieties are governed by the Goldilocks Principle. Take Cabernet Sauvignon. Plant it in a location that’s too hot and you cook the flavor and structure out of the grape. Plant it in a location that’s too cold and you end up with something that’s under-ripe, thin and vegetal.
